Taking a Break From Cooking!

Yesterday I spent 8.5 hours cooking.  We spent about $127 at Costco in the morning and I made 44 meals for my family!!  Some of the food I used we already had like our beans and rice and some chicken breasts.  Here is what I made:
3 Chicken Enchiladas
4 Taco Rice Casseroles
15 Twice Baked Potatoes
2lbs of Taco Meat
1 Chicken Fajita
3lbs Ground Chicken Sausage (toss into pastas)
16 cups Shredded Carrots in 2 cup increments (for tossing into meals)
2 Kielbasa Soup
1 Meatballs in Sauce
12 cooked Chicken Breasts  cut up for salads or pastas (about 4 meals +/-)
34 Frozen Burritos
24 Cheeseburgers to grab and reheat. Click HERE to see what I made. 
Plus I have about 8 cups rice ready to use too.
 
This was one of my goals for the new year and I did it!  I really felt God's hand in it.  Since Mark is self employed we were able to plan for this and he spent the day with the kids.  I started at 2:30pm and put the last piece of foil on my Enchiladas at 11pm.  Praise God!! 
My tips for this are: clean as you go (huge help in our small kitchen), have HUGE mixing bowls and a wonderful husband to support a day of cooking. 
WOW! Now I'm off to go play with my kids and not cook for a while.

ETA: I have 2.5 lbs of cheddar cheese, 3lbs of mozzarella cheese, about 16 cups worth of carrots, 24 hamburger buns, 48 oz of sour cream, half bag of bacon pieces and 2 more onions along with 3/4 container of taco seasoning left from our Costco trip.  I'll use most of it for next time.
